Shuckers® Pecan Pie

Ingredients
  • 4 large egg yolks
  • 1/3 c. dark corn syrup
  • 1/2 c. packed light brown sugar
  • 4 tbsp. unsalted butter, softened
  • 1/4 c. heavy cream
  • Pinch salt
  • 1 tsp. vanilla
  • 9 oz. Blue Crab Bay Co.® Shuckers® pecans, lightly chopped
  • Pie crust
Instructions
In a medium saucepan, combine egg yolks, corn syrup, brown sugar, butter, cream, and salt. Cook over moderate low heat, stirring constantly without boiling, until mixture begins to thicken slightly. Strain into small bowl and stir in vanilla. Spread pecans evenly over bottom of pie crust and pour filling over nuts, coating thoroughly. Place foil ring around edge of pie crust for protection from heat. Bake 20 minutes at 350 degrees. Pie will be puffed and bubbly around edges when done. Cool before serving. Offer with vanilla ice cream or whipped cream if desired.
